"VALENTINE is a small but independently owned winery led by Dominic Valentine. Sourcing fruit from local vineyards as well as varietals from Heathcote, Valentine Wines is renowned for producing wines reflecting site-specific characteristics and honouring the nuances of the area. Dom adopts traditional wine-making methods learned from his extensive worldly experience, alongside more progressive, modern techniques to improve the wines' natural characteristics." 

VALENTINE GRENACHE BLANC 2022

Varietal(s): Grenache Blanc 100%  |  ABV: 12%

Description: aromas of lemon lime zest & minerality phenolics with green apple & honeysuckle make for a delicate mouth-feel on the palate

Viniculture: Whistling Eagle Vineyard - old red fertile Cambrian soil with pockets of greenstone,

hand-picked  
Vinification: whole bunch pressed, French oak hogsheads, natural ferment, 9 months on lees, racked into stainless steel, Minimal Intervention, Minimal SO2, Unfined, Unfiltered, Vegan

VALENTINE CABERNET FRANC 2022

Varietal(s): Cabernet Franc 100%  |  ABV: 13.5%

Description: aromas of cherry, perfume, fine spice with vibrant, juicy balance of red fruit, herbs, earthiness & moderate tannin on the palate

Viniculture: Murrindindi Vineyard - red volcanic and duplex grey clay loam over silty clay soils 
Vinification: destemmed, 100% whole berry ferment,. 5-day cold soak, delicate plunging, pressed-off skins, French oak barrique for 10 months, Minimal Intervention, minimal S02, unfined, unfiltered, vegan

VALENTINE GRENACHE 2021

Varietal(s): Grenache 100%  |  ABV: 13.5%

Description: aromas of lifted perfume, raspberry & cherry onto crunchy red fruits & spice with intertwined red earth fine tannins on the palate

Viniculture: Heathcote Ridge Vineyard - old red fertile Cambrian soil with pockets of greenstone, aged vines, hand-picked 
Vinification: whole bunch and whole berry, open-top ferment, thoughtful extraction, 20 days on skins, wild yeasts, old French oak for 9 months, Minimal Intervention, Minimal S02, Unfined, Unfiltered, Vegan

VALENTINE MONTEPULCIANO 2020

Varietal(s): Montepulciano 100%  |  ABV: 13.5%
Region(s): Heathcote
Description: aromas of dark fruit and spice with concentrated red blue fruits, fennel, olive, dark choc over layered  tannins on the palate

Viniculture: Heathcote Ridge Vineyard - old red fertile Cambrain soil with pockets of greenstone, hand-picked   
Vinification: destemmed, stainless steel, on skins, natural ferment, soft plunging, seasoned French oak barrique, on lees for 18 months, Minimal Intervention, Minimal S02, Unfined, Unfiltered 

VALENTINE CHARDONNAY 2021

Varietal(s): Chardonnay 100%  |  ABV: 13%
Region(s): Yarra Valley
Description: aromas of lifted florals, banana skin, brioche that weave textures of grapefruit, pecan & bright citrus energy on the palate

Viniculture: Lone Star Creek vineyard, Upper Yarra - duplex volcanic clay soil, hand-picked   
Vinification: whole bunch pressed, natural ferment, transferred to French oak casks, (20% new), (20% 1yo) (60% old barrels), remained on lees until blending, tank settle for 1 month, Minimal Intervention, Minimal S02, Unfined, Unfiltered, Vegan

VALENTINE PINOT NOIR 2020

Varietal(s): Pinot Noir 100%  |  ABV: 13.3%
Region(s): Yarra Valley
Description: aromas of dried herbs, dark plum that simulate the senses with dark fruit & cherry to complement generous tannin on the palate

Viniculture: Vue On Halcyon, Lower Yarra Valley - well-structured deep red loam soils, hand-picked
Vinification: destemmed, 20% whole bunch ferment, natural yeast, pump overs and plunging daily, aged French oak barriques, 9 months before blending, Minimal Intervention, Minimal SO2, Unfined, Unfiltered, Vegan
